Another day, another post. So, this was one of those days that I had a friend over and I needed a quick fix , to avoid a lot of cooking and preparation. I did not have to peel anything or even let anything knead or rise.(bakers would understand the struggle). Finally, everybody loves chicken! And when it goes with spinach, it becomes even healthier. Spinach stuffed Chicken breast is a definite go to when you don’t want to spend hours in the kitchen but have a healthy meal at the same.
- 2 Chicken breasts
- Black pepper
- Chopped onions
- In a pan, fry the spinach with some onions and salt until they all get dissolved. Add the cream after to give it a thicker consistency.
- Preheat your oven to 180 degrees.
- Start cutting through the pieces of chicken vertically, then stuff them with the creamy spinach.
Tip: You could still marinade your chicken the way you love it. I used some of the remaining onions and also poured some barbecue sauce.
5.Once the chicken is set, place them on a pan and put in the oven for 20 minutes then turn.
Serve while still hot. Squeeze some lemon to taste.
